Pizza Dough a la Tim
Ingredients
- 500 grams All purpose flour about 3 3/4 cups
- 1/4 teaspoon Active dry yeast 1 gram
- 2 teaspoons Salt 1 gram
- 350 grams water 1 1/2 cups
Instructions
- Mix flour, yeast, and salt in bowl. Add water and mix thoroughly. Cover loosely with plastic wrap. Rise at room temperature for 18 hours (more than doubled).
- Stretch and fold risen dough. Allow to rise for another hour or two. Can be refrigerated (retarded fermentation) for up to 24 hours (bring back to room temperature for an hour or two before next step).
- Scrape dough onto floured surface. Divide into four equal parts. Shape each portion into a round.
- Preheat oven to highest setting for 30-45 minutes before baking. Use a pizza stone on the uppermost rack. Bake two small pizzas at a time on the pizza stone. Check after six or seven minutes.
