Pizza Dough
Ingredients
- 8 pounds Flour Use high gluten or bread flour
- 75 ounces water
- 3 ounces Extra virgin olive oil
- 1 ounce Honey
- 4 ounces Sugar
- 1.5 ounces Yeast active dry yeast
- 16 ounces Beer
- 3 ounces Kosher Salt
Instructions
- 1. Mix together the yeast, water, sugar, honey, oil and beer in the bowl of a stand mixer until bubbly. Approximately 10 minutes.
- 2. Add the flour and the salt and mix on medium speed until elastic. You should be able to stretch the dough between your hand and see through it without breaking it.
- 3. Place in an oiled bowl topped with plastic film and allow to rise for an hour.
- 4. Cut the dough it 6 ounce pieces and shape into rounds. Place the balls on a floured sheet tray and allow to rise in a refrigerator over night.
