Grilled Pizza Dough
Ingredients
- 1/2 tablespoon Quick-rise active dry yeast
- 1/4 cup Water 110F
- 3 cups All purpose flour
- 1 3/4 teaspoon Salt
- 3/4 cups Cold water
- Extra virgin olive oil
Instructions
- Dissolve yeast in water and let sit until proofed.
- Combine flour and salt. Combine yeast mixture with cold water. Slowly pour yeast mixture into the flour and stir with your hands. When firm, remove from bowl and knead for 7 minutes.
- Coat the bowl with olive oil and return the dough. Flip once. Cover with plastic wrap and let rise in warm place until double (2 hours).
- After 2 hours, punch down the dough and knead once more. Cover and let rise for 40 minutes.
- After 40 minutes, punch down the dough and separate into 4 balls.
- On oiled cookie sheet, form your dough circles/rectangles into 6 inch shapes. Oil the other side of the dough.
- Transfer to a hot barbecue grill. When the dough is puffy and the underside is stiff, flip the dough over onto an indirect heat source. Add your toppings quickly. Cover the barbecue until toppings are melted.
- Keep checking to ensure dough is not burning.
